Lavender Lemonade

Looking for the b•e•s•t and most refreshing summer drink? This. Is. It. Entertaining with adults and kids? This is the perfect non-alcoholic party drink. We discovered this years ago at one of our San Diego favorites, Cucina Urbana. So delish! But who can go out to eat every night just for the lemonade? With a little research, I’ve got an easy, at home recipe for you. I promise you’ll be hooked.

The ingredients are simple and things already in your summer pantry, with the exception of the lavender. Don’t be intimidated, it’s absolutely doable. The only other ingredients that you need are sugar and water. Costco makes a great prepared lemonade and I can hardly keep it stocked in the spring and summer. While it’s great by itself, it is also a quick and easy base for this Lavender Lemonade.

Here’s the link to order it and this one bag will last you forever. Maybe not actually forever, but you will get more than your money’s worth out of this.

Let’s get started on the simple syrup. First, you need 1/2 cup of water in a saucepan.

Next, add 3/4 cup of white sugar and stir to dissolve sugar as you start to bring it to a boil.

Here comes the lavender! Add 3 tbsp of the dried lavender and bring it all to a boil. Keep stirring and don’t leave it unattended or it will become too thick.

Once it comes to a boil, you will see it start to look like this. At this point your kitchen starts to smell like some sort of summer garden al fresco fancier-than-you-are dream!

As soon as you see a good rolling boil, drop the heat down to medium and continue to stir until it settles into a gentle simmer. Keep it simmering on medium for 15 minutes.

Once it has simmered for 15 minutes, you will see a slight thickening. Pull the saucepan off the heat and let it sit for an hour. This hour will really seal in those lavender flavors. If you’re in a hurry, less time is okay, it just won’t be as flavorful.

Now you can pour your mixture through a fine strainer and collect the lavender simple syrup. This is what will go in the lemonade to take it to the next level. Discard the lavender buds at this point and if you’re not using it right away, the syrup can be stored in a glass jar.

To serve, I love a full glass of crushed ice and fill it with lemonade to 2/3 full. Then top with the lavender simple syrup and mix. I like to add about 2 tbsp of the simple syrup, but it is so important to do this to your taste. You will find the perfect ratio that works for you. The lavender will settle toward the bottom so I always serve this with a straw or stir stick to keep it fresh and balanced.
